2 year blogaversary chocolate chip pancakes

Two years ago I posted my first ever blog post titled, super simple pancakes. There was one photo, taken on my DSLR in auto mode (because I had no idea how to use it) & a recipe, that’s it! Even with such a basic post, when I went to press that ‘publish’ button I was a mix of gut-wrenching nerves & overwhelming excitement. I held off so many times until finally, I did it, I pressed it and my blog was out there in cyber land. Today, I still feel the same every time I post something. Yes, even as I type this chocolate chip pancakes post my stomach is churning. I’m hoping the nerves will disappear one day, but I never want to lose that feeling of excitement.

I remember it took me ages to put my first website together, I fumbled my way through WordPress. I knew nothing about web design, let alone SEO, analytics, email lists or marketing. My kids were little, two at school & one at preschool, making regular blogging near impossible. Now all my children are in primary school & my website re-design is finished it’s the perfect time to celebrate! Cue the chocolate chip pancakes!

Last year for my I year blogaversary I remade my chocolate jaffa tart and posted it to Instagram here, but didn’t get around to blogging it. This year I decided to mark the occasion with a remake of that very first “super simple pancakes” post. I threw in some chocolate chips, popped a couple of candles on top & bobs your uncle – one celebratory stack of chocolate chip pancakes.

chocolate chip pancakes – happy 2 year blogaversary


1 cup of wholemeal spelt flour

1/2 tsp of bicarb soda (sodium bicarbonate)

I tbsp vanilla

1 cup of your choice of plant milk

1/2 cup mashed ripe banana (approx 1 small banana)

Handful of dark chocolate chopped into chips

1 heaped tablespoon of coconut sugar


Carefully mix the wet with the dry ingredients, taking care not to over mix, so your pancakes stay nice & fluffy.

Gently fold in the chocolate chips.

Spoon mixture into a hot nonstick pan (I also use a little spray oil) & flip when bubbles appear.

Cook on med to low until golden.

Layer with fruit, nuts, nice cream, coconut yoghurt, maple syrup, melted chocolate, whatever you like!
