The Green Smoothie Bowl – Here To Stay

Yes, for 2017 my beloved green smoothie bowl is here to stay.

It may seem crazy to post something that isn’t trending right now. I mean
smoothie bowls have definitely had their time in the spotlight (along with
breakfast jars), but my body is craving all the green stuff after Christmas
holiday festivities.

Last year I embraced spiralising every veggie in sight & turning them into noodles, zoodles or coodles.
Eating meals as ‘bowls’ – smoothie, acai, buddha or sushi. And happily eating my avocado on toast while sipping my matcha latte. Speaking of avocado who could forget the avocado rose!

Who knows what this years healthy food or trend will be. Maybe it will be aqua faba (chick pea juice), something I’m yet to try. Or how about one of the ancient grains like sorghum? Then theres, seaweed, fermented food (like kombucha< or sauerkraut) or perhaps jackfruit. Any of which can be the new health food star this year. For now I’m sticking with what I know & love. The good old green smoothie bowl. Who knows maybe the biggest health food trend for 2017 will simply be eating more plants.

When I first made an effort to eat healthier. I started by adding more plant-based whole foods to my diet. The easiest way to do that was in the form of a smoothie. Quick & easy, smoothies became a great way to add in more fruit & veg. I still love smoothies for when I’m on the go, but having my smoothie in a bowl is much more satisfying to me now.

I love to pack in lots of green veg into my green smoothie bowl & my kids love them too! Packed with iron & vitamins, dark green leafy veg are the perfect feel good ingredient. Lately, I have also been adding the perfect secret ingredient. Zucchini! You can’t taste it, but get all the benefits of potassium, magnesium, vitamins A & C. Just don’t tell the kiddos!

I also like to add some protein & fibre to my smoothie bowl, keeping me fuller for longer. Usually some flax or chia in the smoothie & nuts, seeds or nut butter on top. I often also add in some greens powder, Super Elixir is my favourite.

THE GREEN SMOOTHIE BOWL – HERE TO STAY

INGREDIENTS

(serves 4)

4 small chopped frozen bananas
4 cups of chopped rainbow silverbeet leaves (or other dark green leafy veg)
4 stalks of kale (stems removed)
1 large zucchini
3 or 4 sprigs of mint
2 tablespoons of flax meal
Enough coconut water to achieve your desired consistency ( I used 1/2 cup).
You want your smoothie thick enough to eat with a spoon.

Optional add-ins:
Dates: a couple of dates can up the sweetness if you prefer a sweeter smoothie.
Spirulina powder: High in iron, protein & magnesium it can give your smoothie bowl a boost.
Start small as it has a very distinct flavour, that I found took a while to get used to.
Greens powders: – My absolute favourite is Super Elixir Alkalising Greens.

INSTRUCTIONS

  1. Blend all your ingredients in a high-speed blender & top with anything you like.
  2. Pictured is seasonal summer fruit, crushed pistachios & hemp seeds.
