2 YEAR BLOGAVERSARY CHOCOLATE CHIP PANCAKES

INGREDIENTS
1 cup of wholemeal spelt flour
1/2 tsp of bicarb soda (sodium bicarbonate)
I tbsp vanilla
1 cup of your choice of plant milk
1/2 cup mashed ripe banana (approx 1 small banana)
Handful of dark chocolate chopped into chips
1 heaped tablespoon of coconut sugar
INSTRUCTIONS
- Carefully mix the wet with the dry ingredients, taking care not to over mix, so your pancakes stay nice & fluffy.
- Gently fold in the chocolate chips.
- Spoon mixture into a hot nonstick pan (I also use a little spray oil) & flip when bubbles appear.
- Cook on med to low until golden.
- Layer with fruit, nuts, ice cream, coconut yoghurt, maple syrup, melted chocolate, whatever you like!
