WHOLEMEAL SPELT PANCAKES + WARM BERRY SAUCE

INGREDIENTS
1 cup of wholemeal spelt flour
2 tsp baking powder
1/2 tsp of bicarb soda (sodium bicarbonate)
I tsp vanilla
1 cup of almond milk (or preferred milk)
1 small ripe banana (approx 1/2 cup)
INSTRUCTIONS
- Throw all ingredients into a blender & blend until you have a smooth batter.
- Spoon mixture into a hot nonstick pan (I use a little spray oil) & flip when bubbles appear.
- Cook until golden.
- Top with warm mixed berry sauce & maple syrup.
Berry Sauce: Over a low heat add a mixture of fresh or frozen berries (depending on the season) & cook until they have collapsed into a nice sauce consistency.
