‘BECAUSE I REALLY MISS SUMMER’ TROPICAL BREAKFAST PARFAIT

INGREDIENTS
5 tbs chia seed
1 cup of coconut milk
2 small frozen bananas
1 cup of fresh pineapple
1/2 cup of coconut water (I use Raw C)
Blend & pour half into your tall glass
Then add 1 handful of baby spinach to the remaining smoothie
Blend again & pour over the first layer
Top with strawberries, pineapple & shredded coconut
INSTRUCTIONS
- Chia Pudding
Mix 5 tbs of chia seeds with 1 cup of coconut milk & leave covered in the fridge overnight - In the morning layer with passionfruit & strawberries (or any other tropical fruit you have)
Next layer with your smoothie
2 small frozen bananas
1 cup of fresh pineapple
1/2 cup of coconut water (I use Raw C) - Blend & pour half into your tall glass
- Then add 1 handful of baby spinach to the remaining smoothie
- Blend again & pour over the first layer
- Top with strawberries, pineapple & shredded coconut
This makes 1 huge parfait or 2 smaller parfaits.
