If you have seen my coconut chia pudding recipe you will know I love preparing my breakfast the night before. Mornings are usually so frantic sometimes I don’t even know how I make it out the door. At. All. So when I have one of these in the fridge I can breathe a little easier. But, if it turns into one of ‘those’ mornings this green tea + coconut overnight bircher is absolutely perfect for throwing into a mason jar and running.
This green tea + coconut overnight bircher is made with matcha green tea powder containing 100 times more antioxidants than regular green, black or white tea. These antioxidants can help strengthen the immune system. It is also said that matcha green tea can help alkalise & detoxify, improve mood & reduce physical/mental stress. The coconut provides plenty of fibre, vitamins & minerals, while the coconut water is super hydrating. The oats & chia seeds also play their part providing additional fibre & protein, all of which keep you fuller for longer.

INGREDIENTS
1 cup of rolled oats
2 tbs chia seeds
3/4 cup of shredded coconut
2 tbs matcha green tea powder
1 3/4 cups of coconut water (I like RawC)
Makes enough for 2-4 depending on your serving size.
