Super Simple Pancakes

‘Pancake Sunday’ is now a regular event at our house… so here is my go to healthy, light, fluffy, dairy free, egg free, refined sugar-free, vegan pancake recipe. It’s so easy you could seriously make them with your eyes closed & mine practically are most Sundays 🙂

SUPER SIMPLE PANCAKES

INGREDIENTS

1 cup of wholemeal (wholewheat) self-raising flour
1/2 tsp of bicarb soda (sodium bicarbonate)
I tbsp vanilla
1 cup of almond milk (you could also try, oat, rice, coconut)
1/2 cup mashed ripe banana (approx 1 small banana)

INSTRUCTIONS

  1. Carefully mix the wet with the dry ingredients, taking care not to over mix, so your pancakes stay nice & fluffy.
  2. Spoon mixture into a hot nonstick pan (I also use a little spray oil) & flip when bubbles appear
  3. Cook until golden.
  4. You could just pour some maple syrup over these babies & devour immediately. However, these are layered with grilled bananas and are topped with a blueberry sauce.
  5. To make the sauce simply take some frozen blueberries mix with a little water & rice malt syrup & cook until they have collapsed into a nice sauce consistency.
  6. Then layer till your hearts content!
