Wholemeal Spelt Pancakes + Warm Berry Sauce

Are you saving pancakes for Sunday? there is really no need. These are healthy enough to enjoy any day of the week! Also, they are super quick to make. Add any toppings you like, but since mornings are chilly & fresh berries are definitely out of season… warm berry sauce it is. Hope you enjoy 🙂

WHOLEMEAL SPELT PANCAKES + WARM BERRY SAUCE

INGREDIENTS

1 cup of wholemeal spelt flour
2 tsp baking powder
1/2 tsp of bicarb soda (sodium bicarbonate)
I tsp vanilla
1 cup of almond milk (or preferred milk)
1 small ripe banana (approx 1/2 cup)

INSTRUCTIONS

  1. Throw all ingredients into a blender & blend until you have a smooth batter.
  2. Spoon mixture into a hot nonstick pan (I use a little spray oil) & flip when bubbles appear.
  3. Cook until golden.
  4. Top with warm mixed berry sauce & maple syrup.

Berry Sauce: Over a low heat add a mixture of fresh or frozen berries (depending on the season) & cook until they have collapsed into a nice sauce consistency.
