Roasted Fig + Strawberry Ice Blocks

OK, so it’s technically Autumn, but I’m not ready to say goodbye to summer just yet. There have been a couple of mornings with a definite chill in the air (that have me craving a big bowl of oats & caramelised banana), but the days are still warm – hot even (today was 31). So I think it’s perfectly acceptable to be posting some roasted fig + strawberry ice blocks! The truth is I only just purchased these moulds… yep took me all Summer. I was searching everywhere to find the typical paddle pop shape, then when I finally found them they weren’t BPA free. So the kids chose these & yes they are BPA free, with reusable sticks (just not in this pic).

Roasting the fruit gives them a beautiful flavour & is a great way to use up over-ripe fruit. They were a big hit with my kids & they don’t even like figs… shhh they know these as ‘strawberry’ ice blocks 🙂

ROASTED FIG + STRAWBERRY ICE BLOCKS

INSTRUCTIONS

Simply take 6 plump figs & 14 strawberries, cut & sprinkle with 2 tbs of coconut sugar.

Roast in a 175C fan forced oven for 15-20 mins. Cool, completely & blend in a blender or food processor.

Add a little oat milk to your moulds & then the fruit puree, keep layering to the top.

Swirl mixture gently with a long skewer & freeze. After about 30 mins you can insert the sticks.

Freeze overnight.
