Very Green Apple Salad With Creamy Walnut & Parsley Dressing

This month I am very excited to be collaborating with Woolworths Australia. All new season apples sold in their stores across the country now have no added wax! I am so happy to be able to spread the word & create some yummy healthy recipes using a variety of Aussie apples. My first recipe is this very green apple salad, using Granny Smith apples, kale, celery, grapes & walnuts. Served with a creamy raw walnut & parsley dressing. The dressing is thick, almost like a pesto, but if you would like it a little thinner in consistency just add a splash more water. So satisfying with loads of crunch from the apples, celery & walnuts. Its the perfect fresh, light autumn salad!

The inspiration for this apple salad comes from the classic Waldorf salad, originally created in New York in 1893. My version using kale instead of lettuce. Also swapping the mayonnaise for my egg free creamy raw walnut & parsley dressing. Soaking the walnuts makes them super creamy when blended. Walnuts are so good for you, high in omega 3, antioxidants, biotin, manganese and copper. That’s got to be healthier than mayonnaise. Just looking at this salad makes you feel healthier. Doesn’t it!

VERY GREEN APPLE SALAD WITH CREAMY WALNUT & PARSLEY DRESSING

INGREDIENTS

Salad
1 bunch kale
Juice of 1/2 lemon
2 tbs olive oil
Pinch of sea salt flakes
A few granny smith apples sliced super thin
A few stalks of celery
Small bunch of grapes
Handful of walnuts

Dressing
1 cup of walnuts soaked in water for a few hours
1 bunch of fresh parsley
Juice of 1/2 lemon
1 small garlic clove
Pinch of sea salt flakes
Splash of water if needed

INSTRUCTIONS

  1. For the salad
  2. Chop the kale as fine as possible, mix with the lemon juice, olive oil & salt. Leave to sit for a little while you chop all the other salad ingredients.
  3. Chop all the other salad ingredients.
  4. Make sure you squeeze a little lemon juice of your apples to stop them going brown.
  5. For the dressing
  6. Rinse & drain the soaked cashews
  7. Blend together in a high speed blender or food processor with the parsley leaves (no stalks), lemon juice, garlic & salt.
  8. Dressing will be thick & creamy almost like a pesto.
  9. Thin with a little water if you prefer.
