“Top o’ the mornin” green tea gluten free waffles

I love matcha. I want to add it to everything! It works really well in smoothies and overnight bircher. I’ve also experimented with it in raw desserts. I was going to add it to pancakes one morning, but lately, waffles win the vote in our house. So green tea waffles were born, and because it’s so close to St Patrick’s day they became ‘top o’ the mornin’ waffles. Naturally.


“Top o’ the Mornin” green tea gluten free waffles

Makes 2 Belgian-style waffles

1/2 cup buckwheat flour
1 tsp baking powder
1/4 tsp fresh ground vanilla (more if using extract)
1 tbs flax meal
1 tbs coconut sugar
2 tsp Greenwild Culinary Matcha
3/4 cup your choice of plant milk
1 tbs coconut oil

Mix all the dry ingredients together.
Gradually whisk in your milk.
Whisk in your coconut oil
Cook to your liking in your preheated waffle machine.
Top with your choice of fruit & maple syrup!
